Different kinds of intolerance are a growing problem worldwide, so the food industry has to answer this challenge. The market of “free products” is broadening. Companies providing these kinds of products are often committed to sustainability and circularity as well and are open to the use of upcycled materials.
Bay Zoltan Research Centre, our BIOECO-UP partner from Hungary organised a workshop, in which participants could create their own “free-of-everything” food products, applying Living Lab approach.
Zero Guilt is an award-winning brand, that produces guilt-free, tasty, digestive vegetable-based breads and pastries. During the workshop in Budapest, participants tried different recipes and created upcycled, zero-guilt beetroot tortillas. In the second half of the workshop, experts of the Majomkenyér brand invited the participants to bake sustainable, „free-of-everything” and tasty biscuits, using upcycled materials. Participants worked in pairs and created their own biscuits, but in the end, all of them were evaluated by everyone.
During this busy Saturday, participants gained new knowledge, companies received new ideas and everybody had a great time.
